We enjoyed our cool experience and meal at LaoChang ChunBing Harbin as it was very different from our previous Chinese meals. They specialize in Chinese crêpes or pancakes that can be eaten with a variety of fillings.

Our meal consisted of 4 dishes – shredded potatoes, stir-fried cabbage and noodles, stir-fried chicken (with carrots, green peppers, and mushrooms), and fried eggs. With a little help from our waiter, he gave us a demonstration of how to properly fill and fold our thin pancakes.

You lay one thin pancake on your plate, then fill it with a small sampling of the 4 dishes. You then fold the pancake in a manner to make it easy to eat.
This was something new and fun for us, as we had never had anything like this before. All the dishes and pancakes were delicious.
After a little research, it seems this type of food is also a street food favorite (also called jianbing), that is made with a wheat or rice flour batter and cooked on a griddle. Fillings and toppings vary but may include eggs, scallions, cilantro, pickled vegetables, and a smear of chili paste or hoisin sauce.
